How do you tell a male lobster from a female lobster ?

Most people don´t know (or care) what sex a lobster is when they buy one for dinner. But if youre making a dish like a Lobster Bisque for example, it´s worth hunting for a female because it will have a bright-red roe (up to 8000), called coral, wich adds flavor and deep-pink color to the soup. Use these pointers to tell the difference.

The first pair of pleopods or swimmerets on a male lobster are hard, whereas on a female lobster, they are soft and feathery.

A female lobster has a broader tail to accommodate the roe.
